Carrot cake for breakfast is a great way to start the day! Serves:1-2

1 cup almond milk or soy milk 2 tbsp. coconut milk 1/2 tsp. lemon juice 1/2 cup rolled oats 1 large carrot, grated 1 tsp. vanilla extract 1 tsp. cinnamon 1/4 tsp. ground ginger dash of nutmeg pinch of salt 2 tbsp. maple syrup Garnish pecan or walnut pieces shredded coconut raisins cinnamon almond milk or soy milk maple syrup
In a medium pot, heat almond milk, lemon juice, coconut milk and spices. Stir while heatings.
Once warm, add grated carrot and oats. Lower heat when oatmeal starts to boil. Cook for about 5-8 minutes, stirring frequently.
When the mixture has thickened, stir in vanilla and maple syrup.
Serve immediately, topped with pecan or walnut pieces, raisins, and shredded coconut. Add more almond milk or coconut milk to thin oatmeal, and maple syrup to sweeten.
