1 cup all purpose flour 1 cup whole wheat flour 1/2 cup brown sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 egg, scrambled 1 1/2 tsp. sunflower oil 1 cup unsweetened apple sauce 1/2 cup milk or soy milk 1 large zucchini, grated 1 tsp. vanilla cinnamon, nutmeg 1 tsp. lemon zest 1/2 cup raisins (optional) 1/4 cup pecan pieces (optional)
In a large bowl, mix together flours, sugar, baking powder, baking soda and salt. Form a well in the middle.
Add egg, oil, apple sauce and milk and stir until combined.
Add grated zucchini, raisins, pecans, vanilla and spices. Stir well.
Grease a muffin tin with paper liners and spoon in mixture.
Bake in a preheated oven at 350F for 20-30 minutes, or until a toothpick comes out clean.
