Stir-Fried Beans with Lemon and Cashew
A quick dish of green beans flavoured with lemon and a cashew crunch.
1 tbsp. butter or margarine
1/2 cup unsalted cashews
200g green beans, washed and trimmed
1/3 cup lemon juice
2 tbsp brown sugar
1 tbsp soy sauce
2 tbsp fresh mint leaves, washed and chopped
Heat butter in a frying pan or wok over medium heat. Add cashews and stir fry for 2 minutes. Transfer cashews to a bowl and set aside.
Add beans to pan and stir fry for 3 minutes, until beans are crisp but tender.
Add lemon juice, sugar, soy sauce and mint, cook for 1 minute, or until heated.
Return cashews to the pan and serve beans with couscous, quinoa or rice.
