8-10 Roma tomatoes, stem removed and chopped 2 medium onions, finely chopped 2-3 cloves garlic 3-5 tbsp. extra virgin olive oil salt and pepper
In a large pot, heat oil. Saute onions and garlic for 1-2 minutes, then add tomatoes, salt and pepper. Stir to combine.
Simmer uncovered on medium heat for about 60 minutes, stirring every 8-10 minutes. As the mixture reduces by about half the liquid, a thicker sauce will form. When this occurs, set heat to low and stir more frequently to avoid burning.
